Terroir: Granitic arena, siliceous clay, deep soil for good vine root development
Harvest: early Sptember at optimum ripeness

Vinification: Gentle pressing with a pneumatic press. Static settling for one day and fermentation in traditional glass-enameled underground tanks. Indigenous yeasts.
Aging : 6 month minimum, bottled 1st week of march.

Tasting notes: characterized by exotic fruit aromas with a fine tension on the palate, a simple, juicy wine with good acidity.

Le Besson

Grape variety: 100% Melon de Bourgogne; vines 40 to 60 years old
Yield: 45 hL/ha
Terroir: Gabbro bedrock 40 cm deep
Harvest: mid-September at optimum ripeness

Vinification: Gentle pressing with a pneumatic press. Static cold settling for 12 hours and fermentation in traditional glass-enameled underground tanks. Indigenous yeasts.
Ageing: 18 months on fine lees, with stirring of the lees during the first weeks of ageing.

Tasting Notes : Remarkable aromatic finesse, with white fruit aromas, intense minerality, and iodine and salt notes reminiscent of its proximity to the ocean. Great ageing potential.
Food & wine pairing: Local cuisine with shellfish, scallops and grilled fish.

Pensées Nocturnes

Traditional Method Sparkling Wine

Grape variety: 70% Folle Blanche and 30% Melon de Bourgogne – vines 40 years old
Yield: 40 hL/ha
Terroir: Gabbro-dominated terroir
Harvest: early September at optimum ripeness

Vinification: Gentle pressing of the grape harvest with a pneumatic press. Static settling for one day and fermentation in traditional glass-enameled underground tanks. Indigenous yeasts.
Aging: Pneumatic pressing followed by cold settling for 12 hours. Fermentation for 2 to 3 weeks in temperature-controlled underground glass-lined cement tanks.Matured for 8 months in tanks before the prise de mousse.
Bottled according to the traditional method, then aged on laths for a minimum of 14 months, finally disgorged. Brut Nature – zéro dosage.

Tasting Notes: Floral nose, soft and fruity. In the mouth, lively, very refreshing and fine bubbles.A pure, mineral finish.
Wine pairing: Drink and share with friends.To celebrate, as an aperitif with verrines or sweet or savory appetizers.Can also be enjoyed with dessert.

Cru Château - Thébaud

AOC Muscadet Sèvre & Maine

Grape variety: 100% Melon de Bourgogne; 60-year-old vines
Yield: 40 hL/ha
Terroir: The Château-Thébaud plots are located on hills and slopes overlooking the Maine River on top of a massive, solid granite shelf fault.
The granodiorite subsoil, known as “Château-Thébaud granite”, is characterized by its draining qualities and highly fragmented bedrock, which facilitates the vine’s root development.
Harvest: mid-September at optimum ripeness.

Vinification: The fruit of meticulous work in the vineyard throughout the year, the grapes are carefully transported to the winery. Gentle pressing of the grape harvest with a pneumatic press..The grape juice is lightly settled, then fermented in traditional, underground glass-enameled tanks, only indigenous yeast.
Aging: The wine is then aged for a minimum of 2 years on the yeast lees left over from fermentation, with occasional stirring of the lees to develop the wine’s aromatic complexity and rich taste. This 24-month ageing period ensures that Château-Thébaud has great ageing potential.

Tasting notes: Château-Thébaud expresses finesse and tension, with fresh, spicy notes (fennel, aniseed and licorice) and a saline finish. Served decanted at 12-14°C, it will accompany your meal from aperitif to cheese. It’s the ideal partner for noble fish.

Cru Monnières - Saint-Fiacre

Grape variety: 100% Melon de Bourgogne; 60-year-old vines
Yield: 40 hL/ha
Terroir : The Monnières Saint Fiacrecru is characterized by a gneiss subsoil covered with fairly fine-textured sandy-loam soils. Ripening is regular, moderately early, and a fertile site. A strong wind on the slopes keeps the vines healthy and reduces disease pressure.
Harvest: mid-September at optimum ripeness.

Vinification: The fruit of meticulous work in the vineyard throughout the year, the grapes are carefully transported to the cellar. Gentle pressing of the grape harvest with a pneumatic press. The grape juice is lightly settled, then fermented in traditional, underground glass-enameled tanks, only indigenous yeast. The wine is then aged for a minimum of 2 years on the yeast lees from fermentation, with occasional stirring of the lees. This prolonged ageing gives the Monnières Saint Fiacre wine a fleshy structure.
Aging: Aging lasts a minimum of 2 years on the lees from fermentation, with possible stirring of the lees. This prolonged ageing gives Monnières Saint Fiacrea fuller structure.

Tasting notes: Served decanted at 12-14°C, this wine, with its creamy texture, refreshing bitterness and hint of citrus, can accompany your meal from aperitif to cheese. It’s the ideal partner for fish, seafood and lightly spiced Asian cuisine.

Les P'tits ballons rouges

Vin de France Rouge

Grape variety: 100% Cabernet Franc
Terroir: Granite soil

Vinification: The grapes are harvested when perfectly ripe.  The juice and grapes macerate for 7 to 10 days, allowing the skins to develop their color and aromas. Alcoholic fermentation, which takes place between 20 and 28° C, accelerates this process.Indigenous yeasts
Aging: 10 months in traditional, underground, glass-enameled tanks.
